You'll need:
- Small red and white potatoes, boiled until fork tender in a lightly salted/chicken brothy water- skins still on and cut in half.
- Fry up some diced spicey pancetta until crispy
- Plain yogurt
- Hot sauce
- Dijon
- shallot or red onion
- chili flakes
- roasted red pepper (from the jar)
- fresh cilantro (garnish and in the salad)
- fresh scallions (garnish and in the salad)
- salt/pepper
** Mix everything in a large bowl and then add potatoes after straining them (while they are still hot) so all the flavors absorb.
That's the beauty too; you can eat it hot or cold.
